Yummy Energy Bites

My daughter’s school started again today, and I thought it a good idea to give her teacher these yummy energy bites, you know: for some energy starting this new term!

I looked for a recipe to use with the ingredients I had on hand but did not find the perfect one, so I made up a new recipe! I did not measure it perfectly, so do keep that in mind when trying this recipe out. Also my daughter “helped” make these, so no guarantees, lol!

Ingredients

  • 2 cups oats
  • 4 tbs peanut butter(could substitute for any nutty butter)
  • 3 tbs golden syrup(could substitute for honey)
  • 2 tbs condensed milk
  • 1/2 slab chocolate chopped
  • 1/2 slab for melting on top
  • About a teaspoon of nutmeg

Method

We simply mixed the ingredients, until it was sticky enough to form balls. The condensed milk was the last ingredient added, little by little to get this sticky texture. We pressed it into a tablespoon measuring spoon to get the “mold”.

Lastly, I melted the half-block of the chocolate slab by placing it in a ziplock bag, and into a cup of warm water in the microwave. L dribbled the melted chocolate over the bites.

We placed it into the fridge, just to set. Then I placed it in a jar and made it look pretty by adding a piece of fabric around the lid and finished it off with a ribbon. A perfect teacher’s appreciation gift!
