Make pumpkin and oats grab-and-go muffins for a quick snack or for lunch boxes!

So today I did something I’ve never done before: cut a whole big pumpkin up(with the help of hubby, it’s HARD work!), made pumpkin purée, roasted the pumpkin seeds and baked pumpkin muffins!
I’m the type to buy the already chopped pumpkin when I need it (yes, I am lazy like that), and use the chunks for whatever I need it for. We don’t eat pumpkins only during fall, it is available all throughout the year, but this time someone gave us some pumpkins they grew in their own garden, so I had to do something with it. Now, onto these yummy and healthy muffins I made. I need some grab-and-go options for the days I work, so these will be perfect, and I bet the kids will love them too!
I used the recipe from Food.com and changed it up a bit. I only had about half a cup of flour, so I doubled the oats, making it 2 cups. I also added the seeds I roasted to the mixture and on top(although I will skip adding it to the mixture next time, it is a bit too crunchy, perhaps I’ll rather add chopped walnuts). I added about 3 tablespoons of chocolate chips too. If you want to keep it super healthy, rather add raisins in the place of the chocolate chips.

I baked two dozen in my medium silicone muffin pans, and I bet they will only keep this week. Luckily, I froze two bags of pumpkin purée, so if needs be I can bake again next weekend!
